Paneer Bhurji Roll | Sanjeev Kapoor Khazana

Hot dog buns stuffed with freshly made paneer bhurji mixture. A quick and easy snack for evening hunger pangs

PANEER BHURJI ROLL

Ingredients

250 grams cottage cheese (paneer), grated
4 hot dog buns
1 tablespoon oil
1 teaspoon cumin seeds (jeera)
2 green chillies, chopped
½ teaspoon finely chopped ginger
1 medium onion, finely chopped
1 medium tomato, finely chopped
Salt to taste
½ teaspoon red chilli powder
¼ teaspoon turmeric powder
1 tablespoon chopped fresh coriander leaves
Green chutney as required
Sliced onions for topping

Method

1. Heat oil in a non-stick pan. Add cumin seeds and sauté till seeds change colour.
2. Add green chillies and ginger and sauté well. Add onion, mix and sauté till it turns light brown.
3. Add tomato and salt, mix and cook till it turns soft and pulpy. Add chilli powder and turmeric powder and mix well.
4. Add cottage cheese, mix well and cook for 2 minutes. Add coriander leaves and mix well. Remove from heat.
5. Slit the buns from centre without cutting through. Spread some chutney on the inside and stuff with a portion of paneer bhurji.
6. Top with some sliced onions and serve immediately.
