SHANGHAI CHILI PANEER
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4

Ingredients
For Paneer Balls
400 gms Paneer,
tbsp Tender Coriander stems, chopped,
1 tbsp Schezwan sauce,
tsp Degi red chili powder,
1 inch Ginger (peeled & grated)
Salt to taste,
3 tbsp Cornstarch,
cup fresh Bread crumb,

For Shanghai Chilli Paneer
1 tbsp Oil,
1 inch Ginger (peeled & chopped)
1 medium Onion, diced,
1 medium Carrot (peeled & sliced)
2 no. dry Kashmiri red chillies, broken into half,
1 large Red bell pepper, diced,
1 large Capsicum, diced,
cup Spring onion bulb, roughly chopped,
1 tsp White sesame seeds,
tsp Black peppercorns, crushed,
Fried Shanghai Paneer Balls,
Prepared Sauce,
cup Spring onion, roughly chopped,

For Sauce
2 tbsp Red chili sauce,
1 tbsp Schezwan sauce,
1 tbsp Green chili sauce,
2 tsp Light soya sauce,
3-4 tbsp Tomato ketchup,
tsp Brown sugar, optional,
cup Water,

Other Ingredients
1-2 tbsp Cornstarch (for coating)
Oil for frying,

For Garnish
White sesame seeds,
Coriander sprig,

Process
For Paneer Balls
In a bowl, add paneer, tender coriander stems, schezwan sauce, degi red chili powder, ginger, salt to taste, cornstarch, bread crumbs and mix it well.
Make lemon size balls, transfer it to a tray, sprinkle some cornstarch and coat it well.
Heat oil in a kadai, place prepared balls and fry it until golden in color.
Transfer it to an absorbent paper and keep it aside for further use.

For Shanghai Chilli Paneer
In a wok, add oil, once it's hot, add ginger, onion, carrots and saute it for a minute on high flame.
Add dry red chillies, red bell pepper, capsicum, spring onion bulb, white sesame seeds, black peppercorns, shanghai paneer balls and toss it well on high flame.
Add prepared sauce and cook it for 4-5 minutes until thicken.
Finish it with some spring onion and mix it well.
Transfer it to a serving bowl or dish, garnish it with white sesame seeds and coriander sprig.
Serve hot.

For Sauce
In a bowl, add red chili sauce, schezwan sauce, green chili sauce, light soy sauce, tomato ketchup, brown sugar, water and mix it well.
Keep it aside for further use.
