Paneer Koliwada | Sanjeev Kapoor Khazana

This unique recipe is a treat for vegetarians due to the use of cottage cheese. A must try !

PANEER KOLIWADA

Ingredients

2 cups grated cottage cheese (paneer)
1½ cups gram flour (besan)
2 tablespoons yogurt
½ tablespoon red chilli-garlic paste
1 teaspoon fresh mint paste
1 teaspoon fresh coriander paste
2 teaspoons ginger-garlic paste
Salt to taste
1 teaspoon red chilli powder
1 teaspoon chaat masala
1 teaspoon cumin (jeera) powder
A pinch baking soda
2 teaspoons lemon juice
Oil for shallow-frying
Fresh coriander sprigs for garnishing
Onion rings for serving
Green chutney for serving

Method

1. Mix together yogurt, chilli-garlic paste, mint paste, ginger-garlic paste, coriander paste, chilli powder, chaat masala, cumin powder and salt in a bowl.
2. Add gram flour and water as required and whisk into a thick batter. Add baking soda, lemon juice and whisk. Add cottage cheese and mix well.
3. Heat some oil in a kadai. Place small portions of the prepared mixture, flatten a little and shallow-fry till golden brown from all the sides. Drain on absorbent paper.
4. Garnish with coriander sprigs and serve hot with onion rings and green chutney.
