A must try !PANEER KOLIWADAIngredients2 cups grated cottage cheese (paneer)1½ cups gram flour (besan)2 tablespoons yogurt½ tablespoon red chilli-garlic paste1 teaspoon fresh mint paste1 teaspoon fresh coriander paste2 teaspoons ginger-garlic pasteSalt to taste 1 teaspoon red chilli powder1 teaspoon chaat masala 1 teaspoon cumin (jeera) powderA pinch baking soda 2 teaspoons lemon juiceOil for shallow-frying Fresh coriander sprigs for garnishing Onion rings for serving Green chutney for serving Method1. Mix together yogurt, chilli-garlic paste, mint paste, ginger-garlic paste, coriander paste, chilli powder, chaat masala, cumin powder and salt in a bowl. 2. Add gram flour and water as required and whisk into a thick batter. Add baking soda, lemon juice and whisk. Add cottage cheese and mix well. 3. Heat some oil in a kadai. Place small portions of the prepared mixture, flatten a little and shallow-fry till golden brown from all the sides. Drain on absorbent paper. 4.
