Learn how to make this soft and delicious stuffed punjabi style paneer kulcha using tawa, tandoor and grill oven with this recipe.PANEER KULCHAIngredients2 cups refined flour (maida) + for coating½ teaspoon baking powder¼ teaspoon baking soda½ teaspoon salt1 teaspoon sugar1 tablespoon yogurt ½ cup milk1 tablespoon oil + for greasing Ghee for bastingAchar for servingStuffing200 grams cottage cheese, gratedSalt to taste1 tablespoon chopped fresh coriander 1-2 green chillies, choppedMethod1. Preheat oven to 180° C.2. Sift together flour, salt, baking soda and baking powder in a bowl. Add sugar, yogurt and milk and mix well. Add sufficient water and knead into a semi-soft dough. 3. Transfer the dough on the worktop, add oil and knead again. Cover with cling film and set aside for 40-45 minutes. 4. To prepare stuffing, mix together cottage cheese, salt, coriander leaves and green chillies in a bowl.5. Divide the dough into equal portions, shape into balls and slightly flatten between your plams.6. Coat each portion with flour and roll out into thick disc. Put a portion of stuffing in the center of each disc, apply some water on the edges, bring the edges together and seal. Cover with damp muslin cloth and set aside for 5 minutes.7. Coat each stuffed portion with flour and roll out into thick disc.8. Grease a baking tray with some oil and place the kulchas. Put the tray into the preheated oven and bake for 5-7 minutes, basting with some ghee.9. Cut into wedges and serve hot with achar.
