Grated paneer stuffed parantha to beat your hunger pangs. PANEER LIFAFA PARANTHAIngredients250 grams grated cottage cheese ( paneer)1 medium onion, finely choppedSalt to taste½ tsp red chilli powder8-10 curry leaves, chopped2 green chillies, finely chopped2 tbsps chopped fresh coriander leaves¾ cup whole wheat flour½ cup refined flour2½ tsps oil 4 tsps ghee + for shallow fryingGreen chutney for servingMethod1. Mix cottage cheese, onions, salt, red chilli powder, curry leaves, green chillies and coriander leaves in a bowl.2. Mix whole wheat flour, refined flour and salt in a bowl. Add 1½ tsps oil, sufficient water and knead to soft dough. Add remaining oil and knead again. Set aside for 10-15 minutes.3. Divide the dough into equal portions and roll into balls. Flatten each ball and roll out into thin square.4. Apply some ghee and spread evenly. Place a portion of cottage cheese mixture in the centre. Fold the sides to form an envelope. Roll lightly. 5. Heat a nonstick pan. Place the rolled parantha and roast till golden brown on both the sides.6. Drizzle some ghee and cook for 2-3 minutes.7. Cut into squares and serve hot with green chutney.
