Chapatis stuffed with spicy paneer mixture rolled over and shallow fried.PANEER PARCELIngredients100 grams cottage cheese (paneer), cut into cubes8 chapattis1 small green capsicum, finely chopped1 small red capsicum, finely chopped¼ cup sweet corn kernels1 teaspoon dried mixed herbsSalt to tasteRefined flour (maida) slurry as required Oil for shallow-frying Grated processed cheese for garnishingDip1 tablespoon chopped fresh coriander leaves 8-10 fresh mint leaves1-2 green chillies, finely chopped1 teaspoon cumin seeds (jeera)A pinch of sugarSalt to taste1 teaspoon lemon juice1 teaspoon dried mixed herbs1½ tablespoons homemade mayonnaiseMethod1. To make dip, blend together coriander leaves, mint leaves, green chillies, cumin seeds, sugar, salt, lemon juice, mixed herbs and mayonnaise to a smooth paste. 2. Mix together cottage cheese, green capsicum, red capsicum, sweet corn, mixed herbs and salt in a bowl. Add the prepared dip and mix well. 3. On each chapatti, place the cottage cheese stuffing in the centre, spread a little, roll the edges of the chapatti and seal together with slurry. 4. Heat some oil in a non-stick pan. Place chapattis on it and shallow-fry till golden-brown from both the sides. Drain on absorbent paper. 5. Cut into halves, garnish with cheese and serve hot.
