Paneer Proso Tikki #MilletKhazana Sanjeev Kapoor Khazana

PANEER PROSO TIKKI

Ingredients

cup grated cottage cheese (paneer)
1 cup proso millet
cup boiled and mashed green peas
Salt to taste
tsp red chilli powder
tsp turmeric powder
tsp garam masala powder
1 tsp white sesame seeds
1 green chilli, chopped
2 tbsps chopped fresh coriander leaves
1-2 tbsps oil

Method

1. Wash the proso millet and soak it with sufficient water for 2-3 hours. Drain and transfer into a deep pan. Add 2 cups water, mix, and cover and cook till the mixture comes to a boil. Discard the scum, reduce the heat to low, cover again and cook for 8-10 minutes. Switch the heat off.
2. Transfer half of the cooked proso millet in a large bowl. Add cottage cheese, green peas, salt, red chilli powder, turmeric powder, garam masala powder, white sesame seeds, green chilli, and coriander leaves. Mix till everything is well combined. Take small portions of the mixture and shape each portion into a ball. Flatten it slightly to shape it like a tikki.
3. Heat oil in a non-stick pan. Place the tikkis on it and shallow fry on both sides till golden brown and crisp. Drain on an absorbent paper.
4. Arrange the tikkis on a serving plate, serve hot with green chutney, salad, lemon wedge, and mint sprigs.
