Paneer 65 Recipe 65 Chef Harpal Singh

#Paneer65 is a spicy south indian appetizer made with paneer, flour, spices and herbs like curry leaves . This dish has various stories of its evolutions some say it was in Chennai it was created in a restaurant, my Hyderabad experience says that it was in their traditional Andhra restaurants wherein it was numbered at 65 as a dish and traditionally called Paneer Chatpata, and people while ordering would say get that 65 number paneer dish...and slowly it evoled into Paneer 65

Ingredient Quantity
Paneer 250gms
Ginger garlic paste 1tbsp
Water 2tsp
Salt as Per taste
Red chilli powder 1tsp
Turmeric powder 1/4tsp
Garam masala powder 1tsp
Corn starch 2tbsp
Refined flour 2tbsp
oil for deep frying
Oil 1tbsp
Refined Flour 1tsp
Curd 2tbsp
Red chilli powder 1tsp
Garam masala powder 1 tsp
Water 2 tbsp
Mustard seeds 1/2tsp
Dry Red chilli 4 to 5 no's
Curry leaves 15/20 pieces
Ginger chopped 1tbsp
Garlic chopped 1tbsp
Green chilli chopped 3 to 4nos
Black. Pepper crushed 1tsp
Salt to taste
Chopped coriander leaves 2 tbsp
Chopped coriander leaves for garnish
Method
First take paneer and cut it into cubes, now transfer in bowl , add ginger garlic paste, add water and mix it slowly so that the paneer doesnt break .
Now add salt , red chili powder, turmeric powder , garam masala and toss it well.
Add corn starch , refined flour and mix it well
Oil is been heated properly now slowly and steadily add the paneer cubes one by one and see to it that it doesnt break .
Fry it until crisp & remove it in a absorbent paper
In an another small bowl add refine flour, curd , red chilli powder , garam masala and little amount of water and whisk it well
In an another kadhai heat some oil, mustard seeds , red chilly , curry leaves, ginger chopped , garlic chopped, green chilli chopped , black pepper and the liquid mixture mix it well.
Add salt and mix it well.
Now add fried paneer and some chopped coriander leaves mix it properly
Finally remove in serving bowl garnish it some chopped coriander leaves and serve hot.
