Paneer Besan Gatta Sabzi, पनीर गट्टा की सब्जी, Besan Gatta Sabji, Rajasthani Govind Gatta Sabji, Bharwa Gatte ki Sabzi,Ingredients for Paneer Gatta Sabzi Chickpea flour - `1 cup (100 gms)Paneer - ½ cup (75 gms)Whisked Fresh Curd - ½ cup Oil - 2 to 3 tbsp Paste - 2 tomatoes + 2 green chillies Ginger Paste - ½ tsp Cumin Seeds - ½ tsp Garam Masala - ¼ tsp Black pepper - less than ¼ tsp Red chilli powder - ½ tsp Coriander Powder - 2 tsp Turmeric powder - ½ tsp Black Mustard seeds - ½ tsp Sesam seeds - ½ tsp Salt - 1.25 tsp (or to taste)Baking soda - ½ pinch Curry leaves - 6 to 7How to make Paneer Gatta Sabzi For the dough 1- Take 1 cup of chickpea flour, add less than ½ tsp of salt and ¼ tsp of red chilli powder to it. 2- Add ¼ tsp of turmeric powder, ½ tsp of coriander powder, 3 tsp of whisked curd to it and mix them well. 3- Add a ½ pinch of baking soda to it. 4- Add some water to it and knead its soft dough. Apply some oil on your palms and mash the dough5- Keep it aside to set for 10 minutes. 6- Take a ⅓ cup of paneer, add less than ¼ tsp of salt to it, 1/8 tsp powder of black pepper, mix and mash the paneer using your palms. 7- Divide the paneer into 5 equal portions and divide the dough into 5 equal portions. 8- Lift a piece of paneer and roll it vertically.9- Repeat the same step with the dough. 10- Insert the Paneer in the dough lump and seal the dough using your palms. 11- Roll and flatten it between your palms after applying some oil. 12- Prepare all the Gatta likewise. 13- Preheat the water to boil it. 14- Grease the strainer using some oil and place the Gattas over it. 15- Place the strainer over the boiling water and cover it. 16- Cook it on the medium flame for 12 minutes. 17- The Gattas have cooked and expanded after 12 minutes. For the gravy 1- Preheat a pan and add 2 tbsp of oil over it. 2- Add ½ tsp of cumin seeds in the heated oil and roast it. 3- Add ¼ tsp of turmeric powder, 1 tsp of coriander powder to it on the low flame. 4- Saute the spices and add the paste to it. 5- Add ¼ tsp of red chilli powder, ½ tsp of ginger paste to it and roast it till oil separates from it. 6- Add ½ cup of whisked curd in the intervals and stir it. 7- Stir and cook till oil separates.8- Add ½ cup of water to it, ½ tsp of salt, ¼ tsp of Garam Masala, finely chopped green coriander to it.9- Cover and cook the gravy for 2-3 minutes on the low flame. 10- Pour the gravy in a bowl and add the chopped Gattas in the gravy. 11- Garnish with finely chopped green coriander.12- You can serve the remaining Gattas as snacks after chopping it vertically. For the tempering1- Preheat the tempering pan, add 2 tsp of oil, ¼ tsp of black mustard seeds and 6 to 7 curry leaves.2- Saute them and spread the prepared tempering over Gattas. 3- They are ready to be served.
