Paneer Tikka Samosa | Sanjeev Kapoor Khazana

Freshly made paneer tikkas stuffed into samosa patty and deep fried to make this perfect party starter.

PANEER TIKKA SAMOSA

Ingredients

250 grams cottage cheese (paneer), cut into cubes
8-12 samosa pattis
¾ cup hung yogurt
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
½ teaspoon dried mango powder (amchur)
½ teaspoon garam masala powder
½ teaspoon chaat masala
1 teaspoon coriander powder
2 tablespoons chopped garlic
¼ teaspoon green cardamom powder
Salt to taste
2 tablespoons lemon juice
1 tablespoons refined flour (maida)
¼ cup boiled corn kernels
1 medium onion, finely chopped
1 tablespoon chopped fresh coriander leaves
Oil for deep-frying

Method

1. Mix together hung yogurt, turmeric powder, chilli powder, dried mango powder, garam masala powder, chaat masala, ½ teaspoon coriander powder, 1 tablespoon garlic, cardamom powder, salt and 1 tablespoon lemon juice in a bowl. Add cottage cheese cubes and flour and mix well. Set aside to marinate for 30-40 minutes.
2. Preheat oven to 180̊ C. Place an aluminium foil on a baking tray.
3. Skewer the cottage cheese cubes onto satay sticks and place on the tray. Put the tray in the preheated oven and bake for 20-25 minutes.
4. Remove from heat, cool a little and roughly chop the cottage cheese cubes.
5. Mix together corn kernels, onions, coriander leaves, remaining lemon juice, remaining garlic, remaining coriander powder and cottage cheese cubes in another bowl.
6. Place a spoonful of the cottage cheese mixture on one side of the samosa pattis, roll and shape into samosas sealing with water.
7. Heat sufficient oil in a kadai. Deep-fry samosas till golden brown and crisp. Drain on absorbent paper.
8. Serve hot with green chutney.
