Pani puri with a super cool twist, these masala and pudina sorbets are best when you have sudden pani-puri cravings.PANI PURI SORBETIngredients1 cup fresh coriander leaves½ cup fresh mint leaves2-3 green chillies, choppedSalt to taste14 tsp black salt½ tsp roasted cumin powder1 tsp chaat masala 1 tbsp lemon juice16-20 tartletsCoriander sprigs for garnishStuffing1 tbsp oil¾ tsp red chilli powder½ cup ready-made ragda½ tsp roasted cumin powder½ tsp chaat masalaSalt to tasteMethod1. In a blender jar, add coriander, mint, green chillies, salt, black salt, roasted cumin powder, chaat masala, lemon juice and ½ cup water. Blend till smooth.2. Strain the mixture into a large bowl and pour into individual ice cube moulds and freeze till set.3. For the stuffing, heat oil in a non-stick pan, add red chilli powder and ragda and mix well.4. Add roasted cumin powder, chaat masala, and mix well. Add salt, mix and take the pan off the heat. Set aside.5. De-mould and transfer the frozen mixture into a blender jar and blend till smooth.6. Take tartlets on a serving plate, add small portions of the prepared stuffing into each and top it up with a portion of the prepared sorbet.7. Garnish with coriander sprigs and serve immediately.
