Pani puri with a super cool twist, these masala and pudina sorbets are best when you have sudden pani-puri cravings.

PANI PURI SORBET

Ingredients

1 cup fresh coriander leaves
½ cup fresh mint leaves
2-3 green chillies, chopped
Salt to taste
14 tsp black salt
½ tsp roasted cumin powder
1 tsp chaat masala
1 tbsp lemon juice
16-20 tartlets
Coriander sprigs for garnish
Stuffing
1 tbsp oil
¾ tsp red chilli powder
½ cup ready-made ragda
½ tsp roasted cumin powder
½ tsp chaat masala
Salt to taste

Method

1. In a blender jar, add coriander, mint, green chillies, salt, black salt, roasted cumin powder, chaat masala, lemon juice and ½ cup water. Blend till smooth.
2. Strain the mixture into a large bowl and pour into individual ice cube moulds and freeze till set.
3. For the stuffing, heat oil in a non-stick pan, add red chilli powder and ragda and mix well.
4. Add roasted cumin powder, chaat masala, and mix well. Add salt, mix and take the pan off the heat. Set aside.
5. De-mould and transfer the frozen mixture into a blender jar and blend till smooth.
6. Take tartlets on a serving plate, add small portions of the prepared stuffing into each and top it up with a portion of the prepared sorbet.
7. Garnish with coriander sprigs and serve immediately.
