Crunchy papad in a sabzi avatar.PAPAD KI SABZIIngredients8 roasted papads1 tbsp oil½ tsp mustard seeds1 tsp cumin seedsA pinch of asafoetida ( hing)2 medium onions, chopped1 tbsp ginger-garlic paste¾ cup fresh tomato puree1 cup yogurt1 tsp red chilli powder¼ tsp turmeric powder1 tsp coriander powderSalt to taste1 tsp chopped jaggery½ tsp garam masala powder½ cup roughly chopped fresh coriander + for garnish¼ tsp roasted and powdered kasuri methiMethod1. Heat oil in a deep non-stick pan, add mustard seeds and cumin seeds. Sauté till it changes color. Add asafoetida and mix well.2. Add onions and sauté till onions turn golden brown. Add ginger-garlic paste. Sauté till raw flavor goes away. Add tomato puree and mix well. Cover and cook on medium heat for 4-5 minutes or till oil separates.3. Add yogurt and mix well. Cook on medium heat for 2-3 minutes. Add red chilli powder, turmeric powder and coriander powder. Mix well. Sauté for 2-3 minutes on medium heat.4. Add salt and jaggery, garam masala powder. Mix well. Cook for 2-3 minutes on medium heat.5. Crush and add papads, coriander. Mix well. Add little water and mix well. Add kasuri methi and mix well. Cover and cook for 2-3 minutes on medium heat.6. Transfer in a serving bowl.7.
