Papad Nachos | Sanjeev Kapoor Khazana

A unique recipe of nachos with indian touch by using papads.

PAPAD NACHOS

Ingredients

150 grams assorted papad
1 medium tomato, finely chopped
1 medium onion, finely chopped
1-2 green chillies, finely chopped
1 teaspoon chopped fresh coriander leaves
Salt to taste
1 tablespoon tomato ketchup
1 teaspoon lemon juice
Oil for deep-frying
Fresh coriander sprigs for garnishing
Cheese sauce
½ cup grated processed cheese
1 tablespoon butter
1 tablespoon refined flour (maida)
1 cup milk
Crushed black peppercorns to taste
Salt to taste

Method

1. Heat butter in a non-stick pan. Add flour and sauté for a minute.
2. Add milk, stir and cook for a minute. Add cheese, mix well and cook till it melts.
3. Add crushed peppercorns and salt, mix well and cook till the sauce thickens. Remove from heat and set aside.
4. Put tomatoes, onions, green chillies, coriander leaves, salt and tomato ketchup in a bowl and mix well. Add lemon juice and mix well.
5. Heat sufficient oil in a kadai. Deep-fry papad till crisp. Drain on absorbent paper.
6. Place the fried papad in a serving platter. Pour the white sauce and top with the tomato mixture. Garnish with coriander sprigs and serve immediately.
