A unique recipe of nachos with indian touch by using papads.PAPAD NACHOSIngredients150 grams assorted papad1 medium tomato, finely chopped1 medium onion, finely chopped1-2 green chillies, finely chopped1 teaspoon chopped fresh coriander leavesSalt to taste1 tablespoon tomato ketchup 1 teaspoon lemon juice Oil for deep-frying Fresh coriander sprigs for garnishing Cheese sauce½ cup grated processed cheese1 tablespoon butter1 tablespoon refined flour (maida)1 cup milkCrushed black peppercorns to tasteSalt to tasteMethod1. Heat butter in a non-stick pan. Add flour and sauté for a minute. 2. Add milk, stir and cook for a minute. Add cheese, mix well and cook till it melts.3. Add crushed peppercorns and salt, mix well and cook till the sauce thickens. Remove from heat and set aside. 4. Put tomatoes, onions, green chillies, coriander leaves, salt and tomato ketchup in a bowl and mix well. Add lemon juice and mix well. 5. Heat sufficient oil in a kadai. Deep-fry papad till crisp. Drain on absorbent paper. 6. Place the fried papad in a serving platter. Pour the white sauce and top with the tomato mixture. Garnish with coriander sprigs and serve immediately.
