Papdi Chaat | Cooksmart | Sanjeev Kapoor Khazana

Deep fried tortilla pieces topped with sprout mixture and spicy tangy chutneys.

PAPDI CHAAT

Ingredients

2 large wheat tortillas
Oil to deep fry
1 cup mixed sprouts
½ cup chopped onions
2-3 green chillies, chopped
2 medium potatoes, boiled, peeled and cut into small cubes
1 tsp mixture of red chilli powder, dried fenugreek leaves, salt and dried mango powder
Sweet date and tamarind chutney, as required
Green chutney, as required

Method

1. Cut the tortillas into bite sized pieces.
2. Heat sufficient oil in a deep pan and deep fry the pieces till crisp. Drain on absorbent napkin.
3. Put mixed sprouts, onions, green chillies, potato and spice mixture in a bowl and toss well.
4. Arrange the tortilla pieces on a serving plate, put some of the sprout mixture on each. Drizzle a little sweet date and tamarind chutney and green chutney.
5. Serve immediately.
