Deep fried tortilla pieces topped with sprout mixture and spicy tangy chutneys.PAPDI CHAATIngredients2 large wheat tortillasOil to deep fry1 cup mixed sprouts½ cup chopped onions2-3 green chillies, chopped2 medium potatoes, boiled, peeled and cut into small cubes1 tsp mixture of red chilli powder, dried fenugreek leaves, salt and dried mango powderSweet date and tamarind chutney, as requiredGreen chutney, as requiredMethod1. Cut the tortillas into bite sized pieces.2. Heat sufficient oil in a deep pan and deep fry the pieces till crisp. Drain on absorbent napkin.3. Put mixed sprouts, onions, green chillies, potato and spice mixture in a bowl and toss well.4. Arrange the tortilla pieces on a serving plate, put some of the sprout mixture on each. Drizzle a little sweet date and tamarind chutney and green chutney.5.
