Is a Parsi style potato and eggs, a very interesting and underrated recipe which is a complete delight. PAPETA PAR EEDA (PARSI STYLE POTATO AND EGGS)Ingredients2 medium potatoes8 eggs2 tbsps oil1½ tsps cumin seeds2-3 green chillies, finely chopped1 medium onion, chopped1 medium tomato, choppedSalt to tasteCrushed black peppercorns to taste4 tsps chopped fresh coriander leavesRed chilli powder to sprinkleToasted bread slices to serveTomato ketchup to serveMethod1. Thinly slice potato and set aside.2. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add onion, mix well and cook till translucent.3. Add tomato and mix well. Add salt, mix and cook till the tomato is soft and pulpy.4. Arrange potato slices on the onion-tomato mixture and sprinkle a pinch of salt on top. Cover and cook for 1 minute.5. Break in the eggs in the pan, sprinkle a pinch of salt and crushed black peppercorns. Sprinkle chopped coriander, cover and cook till the eggs are done.6. Sprinkle a little red chilli powder on top.
