PASTA CHAAT

Ingredients

1½ cups boiled macaroni
Oil for deep frying
1 small potato, boiled, peeled and cut into ½ inch cubes
1 small onion, finely chopped
1 small tomato, finely chopped
1 tbsp finely chopped raw mango
2 tbsps freshly chopped coriander leaves
¼ tsp red chilli powder
Black salt to taste
½ tsp chaat masala
½ tbsp green chutney
1½ tbsps date and tamarind chutney
½ tbsp red chilli-garlic chutney
Whisked yogurt as required
Sev for garnish
Pomegranate pearls for garnish

Method

1. Heat sufficient oil in a kadai, deep fry the pasta till golden and crisp. Drain on an absorbent paper.
2. Transfer the pasta into a bowl, add potato, onion, tomato, raw mango, chopped coriander, red chilli powder, black salt, chaat masala, green chutney, date and tamarind chutney and red chilli-garlic chutney. Mix well.
3. Transfer into serving bowls and drizzle yogurt. Garnish with sev and pomegranate pearls.
