This easy to make red sauce pasta recipe is all you need to comfort you on a rainy monsoon evening. PASTA IN RED SAUCEIngredients3 cups farfalle pasta, boiled2 large tomatoes, concasse and finely chopped2-3 large tomatoes, blanched and pureed3 tbsps olive oil + for drizzling1½ tbsps chopped garlic1 medium onion, finely choppedSalt to taste¾ tsp paprika powderCrushed black peppercorns to taste8-10 fresh basil leaves4-5 garlic cloves, sliced6-8 broccoli florets, blanched½ medium yellow capsicum, cut into triangles3-4 cherry tomatoes, halved½ small green zucchini, cut into triangles¼ tsp dried red chilli flakes20 grams parmesan cheeseBasil sprig for garnishMethod1. To make red sauce, heat 2 tbsps oil in a wide pan. Add garlic, onion and sauté till translucent. Add tomatoes and mix well. Add tomato puree and mix well.2. Add salt, paprika powder, crushed black peppercorns and mix well. Cover and cook for 10-15 minutes.3. Add basil leaves and mix well. Cook for 1-2 minutes. Take the pan off the heat.4. Heat remaining oil in a non-stick shallow pan; add sliced garlic and sauté for 30 seconds.5. Add broccoli, yellow capsicum, cherry tomatoes and green zucchini and toss well.6. Add boiled pasta and toss well. Add the prepared tomato sauce and mix till well combined. 7. Adjust salt and crushed black peppercorns. Sprinkle dried red chilli flakes and mix well. 8. Grate parmesan cheese into the pan and mix well. Take the pan off the heat.9. Transfer onto a serving plate, garnish with basil sprig and drizzle olive oil.
