Enjoy a bowl of this piping hot white sauce cheesy pasta along with some crunchy garlic bread on a rainy evening!PASTA IN WHITE SAUCEIngredients3 cups penne pasta, boiled2 cups milk1 layer of onion wedge1 bay leaf1 clove2 tbsps butter2 tbsps refined flour (maida)Salt to taste¼ tsp white pepper powder30 grams processed cheeseA pinch of nutmeg powder2 tbsps olive oil + for drizzling1 tsp chopped garlic½ small yellow squash, cut into triangles10-12 broccoli florets, blanched4-5 cherry tomatoes, halvedCrushed black peppercorns to taste¼ tsp dried red chilli flakes2 fresh thyme sprigs1 fresh oregano sprigFresh parsley sprig for garnishPesto toast for garnishMethod1. Add milk in a non-stick sauce pan, stud onion wedge and bay leaf with clove and add into the milk. Let the mixture come to a boil, take the pan off the heat and set aside.2. Heat butter in a wide-deep pan, add refined flour and mix for 1 minute. Add the prepared milk and mix till well combined. Cook till the mixture thickens. 3. Add salt, white pepper powder and mix well. Grate processed cheese into the pan and mix well. Cook till the cheese melts. 4. Add nutmeg powder and mix well. Take the pan off the heat.5. For the sauce, heat olive oil in non-stick shallow pan. Add chopped garlic and sauté for 30 seconds.6. Add yellow squash, broccoli, cherry tomatoes, and sauté well. 7. Add penne paste and toss well. Add salt, crushed black peppercorns, and mix well. 8. Add the prepared sauce, dried red chilli flakes, thyme and oregano and toss well. Take the pan off the heat.9. Transfer the prepared paste on a serving plate, garnish with parsley sprig, drizzle a little olive oil and serve hot with pesto toast.
