Paunk Ke Vade | Sanjeev Kapoor Khazana

Delicious vadas made with sorghum and mint leaves.

PAUNK K VADE

Ingredients

1 cup raw sorghum (paunk)
½ cup mint leaves
Salt to taste
1 tsp red chilli powder
¼ tsp turmeric powder
½ tsp chaat masala
A pinch of baking soda
3 tbsps gram flour
1 medium onion, chopped
2 green chillies, chopped
½ inch ginger, chopped
Oil for deep frying
Tomato ketchup to serve


Method

1. In a food processor, add paunk, mint leaves, salt, red chilli powder, turmeric powder, chaat masala, baking soda, gram flour, onion, green chillies, ginger and process the mixture to a coarse paste.
2. Heat oil in a non-stick pan, drop small portions of the prepared mix and deep fry till crispy and golden. Drain on an absorbent paper.
3. Serve hot with tomato ketchup.
