PAV BHAJI SIZZLER - (Serves - 4)Ingredients1 pav1 tablespoon butter 1 cup chopped mixed capsicum (red and yellow)4-5 babycorn, halved vertically5-6 French beans, cut into 2 inch pieces2-3 tablespoon green peas, boiled Salt to taste½ teaspoon red chilli powder½ tablespoon chopped fresh coriander leaves150 grams cottage cheese, cut into thick stripsButter as requiredFew cabbage leavesOil for drizzlingBhaji 1 medium raw banana, boiled, peeled and grated1½ tablespoons oil 1 teaspoon cumin seeds (jeera)½ medium green capsicum, choppedSalt to taste2 tablespoons chopped fresh coriander leaves2 tablespoons green peas, boiled1 medium tomato, chopped¼ teaspoon turmeric powder1 teaspoon red chilli powder½ teaspoon garam masala powder1 teaspoon pav bhaji masala 1 tablespoon butter Pulao1½ cups cooked rice½ tablespoon ghee ½ teaspoon cumin seeds (jeera)¼ cup finely chopped mixed capsicum (red, yellow and green)2 teaspoons lemon juiceSalt to taste¼ teaspoon turmeric powder½ teaspoon red chilli powder½ teaspoon pav bhaji masala ½ tablespoon chopped fresh coriander leavesMethod1. To prepare bhaji, heat oil in a non-stick pan. Add cumin seeds and when they change colour, add green capsicum and sauté for 30 seconds. Add salt and sauté for 30 seconds. 2. Add coriander leaves and mix. Add raw banana, green peas, tomato, mix and cook for 1-2 minutes. 3. Add turmeric powder, chilli powder, garam masala powder and pav bhaji masala, mix and cook for 1 minute. Roughly mash the mixture and cook for 1-2 minutes. 4. Add 3-4 tablespoons water, mix and cook for 1-2 minutes. Add butter, mix and cook for 5 minutes. 5. Heat 1 tablespoon butter in a non-stick pan. Add mixed capsicum, babycorn, French beans, green peas and sauté for 1 minute. 6. Add salt, chili powder and coriander leaves and mix. Add cottage cheese strips and mix well. Transfer in a bowl. 7. To prepare pulao, heat ghee in a non-stick pan. Add cumin seeds and when they change colour, add mixed capsicum, rice, lemon juice, salt, turmeric powder, chilli powder and pav bhaji masala and coriander leaves and mix well. Transfer in a bowl. 8. Heat a sizzler plate. 9. Heat a non-stick grill pan. 10. Slit the buns with some side intact, apply some butter on top, place them on hot grill pan and toast from both till grill marks appear and slightly crisp. 11. Place few cabbage leaves on hot sizzler plate and drizzle some oil on top. 12. Fill a medium bowl with pulao, press and level it out. Invert the bowl on one side of the prepared sizzler plate and demould. 13. Place the sautéed vegetable mixture in the center and bhaji on the other side. 14. Halve the toasted pav and place on the prepared sizzler plate. Place the sizzler plate on the wooden sizzler plate, put some butter on the edges of the plate and serve hot.
