The delicious Payesh is perfect for festivals and celebrations at home.PAYESHIngredients1 litre full fat milk1 bay leaf2 tbsps short grained rice, soaked and drained2 tbsps ghee¼ cup broken cashew nuts2 tbsps raisins5-6 coconut slices¾ cup chopped palm jaggeryMethod1. Pour the milk in a deep nonstick pan. Add bay leaf and bring to boil. Add the rice and mix well. Cook for 7-8 minutes.2. Heat ghee in a small nonstick pan. Add cashewnuts, raisins, coconut slices and sauté till the nuts are golden brown.3. Discard the bay leaf and add the fried nut mixture and mix well. Mix well and cook for 2-3 minutes.4. Add palm jaggery and mix well. Cook for a minute.5. Transfer into serving bowls and serve.
