The delicious Payesh is perfect for festivals and celebrations at home.

PAYESH

Ingredients

1 litre full fat milk
1 bay leaf
2 tbsps short grained rice, soaked and drained
2 tbsps ghee
¼ cup broken cashew nuts
2 tbsps raisins
5-6 coconut slices
¾ cup chopped palm jaggery

Method

1. Pour the milk in a deep nonstick pan. Add bay leaf and bring to boil. Add the rice and mix well. Cook for 7-8 minutes.
2. Heat ghee in a small nonstick pan. Add cashewnuts, raisins, coconut slices and sauté till the nuts are golden brown.
3. Discard the bay leaf and add the fried nut mixture and mix well. Mix well and cook for 2-3 minutes.
4. Add palm jaggery and mix well. Cook for a minute.
5. Transfer into serving bowls and serve.
