LeGourmetTV Is Now Glen & Friends Cooking!Nothing goes together like peanut butter and chocolate... add in some bacon, and these cookies are top of the list!1/2 cup (125 mL) unsalted butter, at room temperature; 1/2 cup (125 mL) peanut butter 1/2 cup (125 mL) granulated sugar1/2 cup (125 mL) dark brown sugar1/2 tsp (2 mL) vanilla extract1 large egg1 1/4 cup (310 mL) all-purpose flour1/2 tsp (2 mL) table salt1 tsp (5 mL) baking powder1 cup (250 mL) chocolate chips4-6 strips bacon, fried and crumbledMethod:Pre-heat oven to 375ºFCream butter, peanut butter, sugars, vanilla and egg until fluffy and light colour, about 2 minutes.In another bowl, combine flour, salt, baking powder. Stir flour mix into peanut butter mixture. Stir in chocolate chips.Using a tablespoon, scoop dough into hands and roll into a ball.Then place onto an ungreased baking sheet and place about 2" (5 cm) apart. Squish with a fork. Sprinkle bacon over top of each cookie and squish again.Bake to desired doneness,about 8 to 10 minutes. Cool 5 minutes in pan.
