It’s delicious and healthy both!PEANUT TAMATAR SABZIIngredients2 tbsps oil2 tsps finely chopped garlic1 medium onion, finely chopped3 medium tomatoes, finely chopped¼ tsp turmeric powder2 tsps coriander powderSalt to tasteA large pinch of sugar1 tbsp chopped fresh coriander leaves½ cup peanuts, powderedFresh coriander sprig for garnishRotis to serveLemon wedges to serveOnion wedges to serveMethod1. Heat oil in a non-stick pan, add garlic and sauté well. Add onion and sauté till golden brown. 2. Add tomatoes and mix well. Cover and cook till the tomatoes turn soft and pulpy.3. Add turmeric powder, coriander powder and salt and mix well. Add ¼ cup water and mix well. Cook for a minute.4. Add sugar and chopped coriander and mix. Cook for a minute. Add peanut powder and mix well. Add ¼ cup water and mix, cook for a minute. Take the pan off the heat.5. Transfer into a serving bowl, garnish with fresh coriander sprig and serve hot with rotis and lemon wedges and onion wedges.
