Penne Arrabiata | Sanjeev Kapoor Khazana

Boiled penne pasta tossed in tangy arrabiata sauce.

PENNE ARRABIATA

Ingredients

2 cups boiled penne pasta
1 tablespoon olive oil
2 tablespoon chopped garlic
1 medium onion, finely chopped
1½ cups tomato concasse
Salt to taste
Crushed black peppercorns to taste
1 teaspoon red chilli flakes
A pinch of castor sugar
3-4 fresh basil leaves
4-5 black olives, pitted and sliced
10 grams parmesan cheese
Fresh basil sprig for garnishing
Garlic bread slices for serving

Method

1. Heat olive oil in a non-stick pan. Add garlic and onion and sauté till onion turns translucent.
2. Add tomato concasse, mix and cook for 1 minute. Add salt, mix and cook for 1-2 minutes.
3. Add pasta, crushed peppercorns and chilli flakes, mix and cook for 1 minute. Add castor sugar and adjust salt, mix and cook for 1-2 minutes. Add torn basil leaves and mix well.
4. Put prepared pasta in a serving bowl. Put black olive slices and garnish with parmesan shavings and basil sprig.
5. Serve hot with garlic bread slices.
