Heat olive oil in a non-stick pan. Add garlic and onion and sauté till onion turns translucent. 2. Add tomato concasse, mix and cook for 1 minute. Add salt, mix and cook for 1-2 minutes. 3. Add pasta, crushed peppercorns and chilli flakes, mix and cook for 1 minute. Add castor sugar and adjust salt, mix and cook for 1-2 minutes. Add torn basil leaves and mix well. 4. Put prepared pasta in a serving bowl. Put black olive slices and garnish with parmesan shavings and basil sprig.5. Serve hot with garlic bread slices.
