A combination of bell peppers and garlic tossed with long grain fluffy rice!PEPPER GARLIC RICEIngredients1 medium green capsicum, cut into small cubes1 medium red capsicum, cut into small cubes1 medium yellow capsicum, cut into small cubes3-4 garlic cloves, sliced1½ cups Basmati RiceSalt to taste1 tbsp oil1 spring onion bulb, choppedCrushed black peppercorns to taste2 tsps soya sauce1 tsp vinegar1 stalk spring onion greens, choppedGarnishFried garlicSpring onion greens, diagonally slicedMethod1. Take Basmati Rice in a bowl. Add water and set aside for 30-40 minutes. Drain the rice and set aside.2. Heat sufficient water in a nonstick pan, add salt and rice, cook till ¾ done. Strain and set aside.3. Heat oil in a non-stick pan, add spring onion bulb and garlic sauté for 2-3 minutes.4. Add green capsicum, red capsicum, yellow capsicum and sauté for 1-2 minutes.5. Add rice and mix well. Add salt, crushed pepper and soya sauce, mix well.6. Add vinegar and chopped spring onion greens mix well.7.
