Pepperoni Crostini | Sanjeev Kapoor Khazana

Loaded with pepperoni slices, red wine, and fresh arugula, this Crostini as very simple to make, serving as the perfect party dish.

PEPPERONI CROSTINI

Ingredients

16-20 pepperoni slices
8 baguette slices
¼ cup red wine
½ inch cinnamon
2 teaspoons sugar
½ cup Ricotta
Salt to taste
Crushed black peppercorns to taste
8-16 arugula leaves

Method

1. Preheat oven to 180° C.
2. Place baguette slices on a baking tray. Put the tray into the preheated oven and toast for 5 minutes.
3. Heat red wine in a non-stick pan. Add cinnamon, sugar and cook till reduced.
4. To prepare one crostini, spread some ricotta on one toasted baguette slice. Sprinkle some salt and crushed peppercorns. Place 3 pepperoni slices and 1-2 torn arugula leaves alternatively.
5. Drizzle some red wine reduction and serve.
