Here's the recipe of a classic snack with a slight tiwst- Peri Peri Chakli Sticks.PERI PERI CHAKLI STICKSIngredients1 cup semolina (rawa)Salt to taste2 tbsps butterPeri peri masala1 tbsp dried parsley leaves1 tbsp dried oregano leaves½ tbsp dried garlic granules½ tbsp dried basil leaves1 tbsp dried red chilli flakesSalt to taste10-12 black peppercorns2 tbsps dried onion flakes1½ tbsps coriander seeds, roasted½ tbsp cumin seeds, roasted¼ tsp citric acid1 cup rice flourOil for deep fryingMethod1. Heat 1 cup water in a deep non-stick pan, add salt and butter and let the water come to a boil.2. Add semolina and mix well. Cook for 1-2 minutes. Transfer on to plate. Allow to cool slightly.3. Meanwhile, add parsley, oregano, garlic, basil, red chilli flakes, salt, black peppercorns, onion flakes, coriander seeds, cumin seeds and citric acid in a blender jar and blend to a fine powder.4. Add rice flour in the prepared semolina mixture and knead till well combined. Divide the mixture into 2 parts.Grease chakli press with oil and stuff it with a portion of the prepared mixture.5. Heat sufficient oil in a kadai, press the chakli press and drop sticks into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper.6.
