PERI PERI CHICKEN BURGER

Ingredients

250 grams boneless chicken breasts
2½ tablespoons Peri Peri spice mix
4 burger buns, halved
Salt to taste
Crushed black peppercorns to taste
1 tablespoon ginger-garlic paste
Juice of ½ lemon
¾ cup refined flour (maida)
1 egg
Oil for grilling
8 tablespoons mayonnaise + as required
2-3 Iceberg lettuce leaves, torn
20 grams processed cheese slices
¼ cup cabbage juliennes
¼ cup carrot juliennes

Method

1. Slice chicken breasts thickly and place on a plate. Add salt, crushed peppercorns, 2 tablespoons Peri Peri spice mix and ginger-garlic paste and rub well. Add lemon juice, rub again and set aside to marinate.
2. Mix together flour, salt, crushed peppercorns and remaining Peri Peri spice mix in a bowl.
3. Break eggs in a bowl. Add salt and crushed peppercorns and beat well.
4. Dip chicken slices in beaten eggs and coat in the flour mixture.
5. Heat some oil in a non-stick grill pan. Place chicken pieces in it and grill till evenly done from both the sides and fully cooked.
6. Toast buns in the same pan till lightly browned.
7. Spread 1 tablespoon mayonnaise on each bun halve. Top half of them with lettuce leaves and place 1-2 grilled chicken slices on it.
8. Shred cheese slices. Add cabbage and carrot juliennes, some mayonnaise, crushed peppercorns and salt and mix well.
9. Place a portion of cheese-vegetable mixture onto grilled chicken slices on each bun halve, cover with remaining bun halves and serve immediately with tomato ketchup.
