Ingredients:
For Saffron water:
Iranian saffron strands - 2 pinch
Rose water - 1/2 cup
Sugar - 1/2 tsp

For Jujeh Kebab:
Boneless Chicken Thighs - 500 gms
Onion juice - 1 medium
Lemon zest - 1/2 tsp
Lemon juice - 1 tsp
Turmeric powder - a pinch
Curd - 2 tsp
Salt to taste
Black pepper powder - 1/2 tsp
Saffron water - 2 tsp

For Koobideh:
Minced meat - 300 gms
Grated onion - 1 medium
Garlic crushed - 3 cloves
Lemon zest - 1/2 tsp
Sumac powder - 1 tsp
or
Coriander powder + aamchur - 1 tsp
Salt to taste
Baking soda - 1/2 tsp
Saffron water - 2 -3 tsp

For rice:
Basmati Rice - 2 cups
washed and soaked for atleast 2-3 hours
Water - 1 lt
Salt to taste

For Tahdig:
Curd - 2 tsp
egg yolk - 1
Melted butter - 2 tsp
Saffron water - 1 tsp
Cooked rice - 1 cup

Tomatoes - 2 - 3
Herbs n salad - as needed
Skewers - as needed
