Pesto Fish | Sanjeev Kapoor Khazana

FIsh pieces marinated with freshly made pesto sauce and shallow fried.

PESTO FISH

Ingredients

4 pieces Surmai, darne cut
2 tablespoons olive oil
4-5 garlic cloves
15-20 basil leaves
ΒΌ cup pine nuts
Oil for shallow frying
1 small onion, sliced for serving

Method

1. Blend together oil, garlic cloves, basil leaves and pine nuts in a blender to make pesto.
2. Marinate the fish in pesto and set aside.
3. Heat sufficient oil in a non-stick pan for shallow-frying.
4. Shallow-fry the marinated fish till cooked.
5. Drain on absorbent paper.
6. Garnish with mint sprig and serve warm with sliced onion.
