Blend together oil, garlic cloves, basil leaves and pine nuts in a blender to make pesto. 2. Marinate the fish in pesto and set aside. 3. Heat sufficient oil in a non-stick pan for shallow-frying. 4. Shallow-fry the marinated fish till cooked. 5. Drain on absorbent paper. 6. Garnish with mint sprig and serve warm with sliced onion.
