Sinfully rich ash gourd halwaPETHE KA HALWAIngredients1 medium ash gourd (petha)3 cups milk¾ cup sugar ½ tsp green cardamom powder2 tbsps roughly chopped cashewnuts¾ cup grated mawa/khoya2 tbsps ghee1 tsp rose water6-8 fried cashewnutsMethod1. Peel, quarter, remove seeds and grate the ash gourd and keep soaked in water.2. Heat a non-stick pan, squeeze the grated ash gourd to remove excess water and put into the pan. Add 2 cups milk and cook.3. Add sugar and mix well. Add green cardamom powder and mix. Add ½ cup milk more and continue to cook till all the milk gets absorbed.4. Add ½ cup milk more and cook stirring. Add mawa and mix.5. Add chopped cashewnuts and cook, stirring continuously. 6. Add 2 tbsps ghee and cook till thick. Add rose water and mix.7.
