Sinfully rich ash gourd halwa

PETHE KA HALWA

Ingredients

1 medium ash gourd (petha)
3 cups milk
¾ cup sugar
½ tsp green cardamom powder
2 tbsps roughly chopped cashewnuts
¾ cup grated mawa/khoya
2 tbsps ghee
1 tsp rose water
6-8 fried cashewnuts

Method

1. Peel, quarter, remove seeds and grate the ash gourd and keep soaked in water.
2. Heat a non-stick pan, squeeze the grated ash gourd to remove excess water and put into the pan. Add 2 cups milk and cook.
3. Add sugar and mix well. Add green cardamom powder and mix. Add ½ cup milk more and continue to cook till all the milk gets absorbed.
4. Add ½ cup milk more and cook stirring. Add mawa and mix.
5. Add chopped cashewnuts and cook, stirring continuously.
6. Add 2 tbsps ghee and cook till thick. Add rose water and mix.
7. Serve hot garnished with fried cashewnuts.
