Sweet and sour cucumber. A quick and easy recipe.PICKLED CUCUMBER Ingredients2 large light green cucumbers, unpeeled1 tsp red chilli oilSalt to taste5 tsps sugar3 tsps vinegarMethod1. For chilli oil, mix 1 tsp red chilli powder with 1 tbsp oil in a small non-stick pan and cook for 3-5 minutes. 2. Cut cucumbers into long pieces, seed and roughly cut into big cubes. Add salt and set aside for 10-15 minutes. 3. Drain excess water from the cucumbers mixture. Add sugar, vinegar and mix well. Add red chilli oil, mix and refrigerate for 3-4 hours. 4.
