This fruity concoction is a must try. Pineapple gives it the zing that it needs whereas peach gives it the perfect amount of sweetness.

PINEAPPLE AND PEACH COLADA

Ingredients

4 tinned pineapple slices + for garnishing
4 tinned peaches + for garnishing
1 cup coconut milk
4 scoops vanilla icecream
4 fresh mint sprigs

Method

1. Chop pineapple slices and put into a blender jar. Chop peaches and add to the jar and blend.
2. Add ½ cup coconut milk and blend again. Add vanilla icecream and blend again.
3. Pour into 4 glasses. Decorate the rim with small pieces of pineapple and peach and a sprig of fresh mint.
4. Serve chilled.
