Pista Barfi | Sanjeev Kapoor Khazana

Barfi or burfi is a dense milk based sweet confectionery. The name is a derivative of the Persian word barf, which means snow. Try out this pista snowy delight.

PISTA BARFI

Ingredients

2 cups pistachio powder
1½ tablespoons ghee + for greasing
¾ cup sugar
½ tablespoon milk
2 tablespoons liquid glucose
Silver varq for garnishing

Method

1. Grease a barfi tray with some ghee.
2. Heat sugar with ¼ cup water in a non-stick pan. Stir till the sugar melts.
3. Add milk, stir and discard the scum. Cook till a thick syrup is formed. Add liquid glucose and ghee and mix well.
4. Add pistachio powder, mix well and cook till the mixture thickens. Transfer the mixture in the greased tray and spread evenly.
5. Garnish with silver varq and leave at room temperature till it sets.
6. Cut into diamonds and serve.
