PISTACHIO CRUSTED CHICKENIngredients1 cup US Pistachios, blanched, peeled and driedUS Pistachios powder for garnish4 boneless chicken breastsSalt to taste Crushed black peppercorns to taste1 tsp onion powder¾ tsp garlic powder½ tsp dried mixed herbs1 tbsp Worcestershire sauce2 tbsps olive oil + for drizzling2-3 white bread slices, edges trimmed¼ cup fresh parsley sprigsMustard paste for applyingOil for greasing Saffron mayo to servePistachios powderSalad to serveMethod1. Take the chicken breast on a plate, sprinkle salt, crushed black peppercorns, onion powder, garlic powder, dried mixed herbs, Worcestershire sauce and olive oil. Rub the mixture well on the chicken and set it aside to marinate for 10-15 minutes.2. Preheat the oven at 180ºC.3. Put the US Pistachios in a food processor jar. Tear bread slices and add along with parsley sprigs and blend to a fine mixture. Transfer this into a shallow wide bowl and spread it evenly.4. Place the marinated chicken on another plate and brush mustard sauce on all the sides. Coat this with the pistachio mixture till well coated on all sides.5. Grease a baking tray with some oil. Place the chicken over it and bake it in the preheated oven for 15-20 minutes. 6. Bring the tray out of the oven and gently place the chicken on a worktop. Thickly slice it and arrange it on a serving plate.
