Pithla is a popular accompaniment that Maharashtrians never tire of having! Once you try it, you will want to have it too, as often as possible. PITHLAIngredients ½ cup gram flour (besan) 2 tablespoons oil 1½ teaspoon cumin seeds (jeera)1-2 green chillies, finely chopped 1 tablespoon finely chopped garlic 8-10 curry leaves 2 medium onions, finely chopped¼ teaspoon turmeric powder 1 teaspoon red chilli powder Salt to taste 2 teaspoons lemon juice 1 tablespoon chopped fresh coriander leaves + for garnishing Method 1. Heat oil in a non-stick pan. Add cumin seeds, green chillies, ginger and curry leaves and sauté well. Add onions, mix and sauté till they turn light brown. 2. Add gram flour, mix well and cook for 4-5 minutes. Add turmeric powder, chilli powder, mix and cook for another 5-6 minutes. 3. Add salt and lemon juice and mix. Add 1 cup water, mix till smooth, cover and cook for 5-6 minutes. Add coriander leaves and remove from heat. 4. Garnish with coriander leaves and serve hot.
