Pizza Dough Balls | Sanjeev Kapoor Khazana

Freshly baked pizza dough balls served with 3 different types of dips.

PIZZA DOUGH BALLS

Ingredients

Pizza dough as required
Refined flour for dusting (maida)
Milk for brushing
20-25 fresh basil leaves
6-8 garlic cloves
1 tablespoon pine nuts
Crushed black peppercorns to taste
Salt to taste
1 tablespoon Parmesan cheese powder
2 tablespoons olive oil
1 cup mayonnaise
1 tablespoon pommery mustard
½ teaspoon Tabasco sauce
1 tablespoon tomato ketchup
1 teaspoon chopped fresh parsley

Method

1. Preheat oven to 180̊ C.
2. Dust the worktop with some flour, place the dough and knock back to release excess air.
3. Divide the dough into equal portions and shape into balls. Place on a baking tray and brush some milk on top.
4. Put the tray into the preheated oven and bake for 20-25 minutes. Remove from oven.
5. To prepare pesto, coarsely grind together garlic cloves, pine nuts, crushed peppercorns, salt, basil leaves, Parmesan cheese powder and olive oil.
6. Divide mayonnaise in 3 equal portions.
7. Add 1 tablespoon pesto to one portion of mayonnaise bowl and mix well. Transfer in a serving bowl.
8. To prepare mustard dip, add pommery mustard to another portion of mayonnaise bowl and mix well. Transfer in another serving bowl.
9. To prepare cocktail dip, add tabasco sauce, tomato ketchup and parsley to another portion of mayonnaise and mix well. Transfer in another serving bowl.
10. Serve the baked pizza dough balls with prepared dips.
