PIZZA POCKET Ingredients1 pizza base, cut into half1 medium tomato, chopped½ cup mixed bellpeppers, roughly chopped¼ cup boiled sweet corn kernels¼ cup grated cottage cheese¼ cup grated processed cheese½ tablespoon chilli flakes½ tablespoon dried oreganoSalt to taste¼ cup tomato ketchup + for servingButter for bastingMethod1. Preheat oven to 180˚C. 2. Mix together tomatoes, mixed bellpeppers, sweet corn, cottage cheese, processed cheese, chilli flakes, dried oregano, salt, tomato ketchup in a mixing bowl. 3. Cut a pizza base into half and shape into pockets. Stuff the pockets with the prepared mixture and seal the edges together. 4. Transfer the stuffed pizza pockets to a baking tray and bake for 8-10 minutes. 5. Remove baking tray from the oven and baste it with butter.
