Pizza Pockets as shown by Chef Amisha Doshi is a perfect snack that taste absolutely delectable, and its Italian roots add a special flavour to the dish.

PIZZA POCKET

Ingredients

1 pizza base, cut into half
1 medium tomato, chopped
½ cup mixed bellpeppers, roughly chopped
¼ cup boiled sweet corn kernels
¼ cup grated cottage cheese
¼ cup grated processed cheese
½ tablespoon chilli flakes
½ tablespoon dried oregano
Salt to taste
¼ cup tomato ketchup + for serving
Butter for basting

Method
1. Preheat oven to 180˚C.
2. Mix together tomatoes, mixed bellpeppers, sweet corn, cottage cheese, processed cheese, chilli flakes, dried oregano, salt, tomato ketchup in a mixing bowl.
3. Cut a pizza base into half and shape into pockets. Stuff the pockets with the prepared mixture and seal the edges together.
4. Transfer the stuffed pizza pockets to a baking tray and bake for 8-10 minutes.
5. Remove baking tray from the oven and baste it with butter. Cut the pockets into four pieces and transfer to a serving plate.
6. Serve hot with tomato ketchup.
