All the flavours of a good cheese pizza in a tart.PIZZA TARTIngredients1½ cups refined flour (maida) + for dusting 20 grams fresh yeast1 teaspoon castor sugar1 teaspoon milk powder1 teaspoon baking powder1 teaspoon salt1 tablespoon oil + for greasingButter for brushing 4 tablespoons pizza sauce6 tablespoons grated mozzarella cheese 8-12 fresh basil leaves Method1. Mix together yeast, castor sugar and 1-2 tablespoons water. Set aside to activate. 2. Mix together flour, milk powder, baking powder and salt in a bowl. Add activated yeast and sufficient water and knead to a soft dough. Add oil and knead again.3. Grease a bowl with some oil, place dough in it, cover with a cling film and set aside to prove. 4. Preheat oven to 180º C. 5. Divide the dough into 4 equal portions, place on a dusted worktop and roll out into thin discs. 6. Line individual tart moulds with the discs and discard the excess dough. Fill with chickpeas and transfer them on a baking tray. 7. Put the tray in preheated oven and blind bake for 8-10 minutes. Remove from oven, cool and demould. 8. Brush tarts with some butter and spread 1 tablespoon pizza sauce in each. Top with 1½ tablespoons cheese and 2-3 basil leaves. 9. Transfer them on a baking tray, put the tray in preheated oven and bake till the cheese melts.10. Serve hot.
