Pomfret Recheado | Sanjeev Kapoor Khazana

Whole pomfrets marinated with spicy masala and shallow fried.

POMFRET RECHEADO

Ingredients

4 medium pomfret
10-12 Kashmiri dried red chillies, soaked
1 tablespoon cumin seeds (jeera)
8-10 black peppercorns
2 tablespoons chopped ginger
5-4 garlic cloves
2 tablespoons tamarind pulp
2 tablespoons malt vinegar
Salt to taste
Oil for shallow-frying

Method

1. Blend together dried red chillies, cumin seeds, peppercorns, ginger, garlic, tamarind pulp, malt vinegar and salt with water as required into a smooth paste.
2. Make incisions on the pomfret, apply the prepared paste, rub well and set aside to marinate for 30 minutes.
3. Heat some oil in a non-stick pan. Place the marinated pomfrets and shallow-fry till the fish is fully cooked and evenly browned from both the sides.
4. Serve hot.
