Pork Sorpotel | Sanjeev Kapoor Khazana

Pork Sorpotel- a typical spicy Goan, Indian pork curry. Learn how to make pork sorpotel easily from scratch with common ingredients at home!

PORK SORPOTEL

Ingredients

400 grams boneless pork, boiled and cut into small pieces
100 gram pork liver, boiled and cut into small pieces
5 tablespoons oil
½ tablespoons chopped ginger
1 tablespoon chopped garlic
2-3 green chillies, chopped
3 medium onions, finely chopped
Salt to taste
1 cup pork stock
1 teaspoon sugar
1 tablespoon tamarind pulp
⅓ cup vinegar
Masala
12-16 dried red chillies
5-6 cloves
3-4 green cardamoms
7-8 black peppercorns
2 inch cinnamon
2 teaspoons cumin seeds (jeera)

Method

1. To make the masala, dry roast all the spices till fragrant. Soak in warm water for 30-40 minutes.
2. Strain the soaked spices in a blender jar and blend to a smooth paste. Use the liquid if required.
3. Heat 4 tablespoons oil in a non-stick pan. Add pork and pork liver pieces and sauté till they turn golden brown. Remove from heat and set aside.
4. Heat remaining oil in the same pan. Add ginger, garlic, green chillies, mix and sauté till fragrant.
5. Add onions and salt, mix and sauté till it turns translucent. Add the masala and ½ cup stock and mix well. Cover and simmer for 3-4 minutes.
6. Add fried pork and pork liver and mix well. Add remaining stock and stir.
7. Add sugar and tamarind pulp, stir and bring to a boil. Add vinegar, salt, stir and cook for 15-20 minutes.
8. Serve hot.
