Potato Bites | Sanjeev Kapoor Khazana

Spicy potato mixture rolled into small bites, dipped into batter coated with bread crumbs and deep fried.

POTATO BITES

Ingredients

3-4 medium potatoes, boiled, peeled and grated
2 tablespoons schezwan sauce
¼ cup mayonnaise
Crushed black peppercorns to taste
1-2 green chillies, chopped
1 teaspoon chilli flakes
1 tablespoon chopped fresh coriander
¼ cup dried breadcrumbs + for coating
Salt to taste
2-3 tablespoons corn flour slurry
Oil for deep-frying

Method
1. Mix together potatoes, schezwan sauce, mayonnaise, peppercorns, green chillies, chilli flakes, coriander, bread crumbs and salt in a bowl.
2. Divide the prepared mixture into equal portions. Dip in slurry, coat in bread crumbs, roll lightly between your palms, repeat the process once again and place on a plate.
3. Heat sufficient oil in a kadai. Deep-fry the potato bites until golden-brown and crisp. Drain on absorbent paper.
4. Serve hot with ketchup.
