POTATO CHIPS AND SEV OMELETTE

Ingredients

1 cup potato chips
½ cup sev
7 eggs
1 medium onion
1 tsp oil
2 tbsps sweet red chilli sauce
1 tbsp fresh cream
Oil for greasing
1-2 fresh parsley sprigs

Method

1. Chop onion.
2. Heat oil in a non-stick pan. Add chopped onion and saute.
3. Break eggs in a bowl. Add chilli sauce and beat well. Add cream and beat again.
4. Grease a cake tin/tart mould with oil.
5. Pour beaten eggs in the pan and cook slightly.
6. Place potato chips in the cake tin/tart mould.
7. Remove pan from heat and scramble eggs a little. Pour the egg mixture on the potato chips.
8. Roughly chop parsley springs and add on top. Top with sev and bake at 180ºC for 15 minutes.
9. Serve hot.
