Potato Lollipop | Sanjeev Kapoor Khazana

Quick and easy-to-make party snacks using mashed potatoes.

POTATO LOLLIPOP

Ingredients

4 medium potatoes boiled, peeled and grated
1 spring onion green, chopped
1½ tbsps schezwan sauce
½ tsp red chilli flakes
Salt to taste
A pinch of black pepper powder
3 tbsps cornstarch
Oil for greasing + for deep frying
¼ cup cornflour
Tomato ketchup to serve

Method

1. Take potatoes, spring onion green, schezwan sauce, red chilli flakes, salt, black pepper powder and cornstarch in a bowl. Mix well.
2. Grease palms with oil and shape mixture into medium sized balls.
3. Roll the balls in cornflour.
4. Heat sufficient oil in a kadai, add the balls and deep fry till golden brown and crisp. Drain on an absorbent paper.
5. Transfer in a serving platter and insert colourful toothpicks in the fried balls.
6. Serve hot with tomato ketchup.
