POTATO THALIPEETH

Ingredients

3 medium potatoes, peeled
1½ cups Kuttu flour
1 tbsp ginger-green chilli paste
2 tbsps chopped fresh coriander leaves
¼ cup roasted and crushed peanuts
Rock salt (senda namak) to taste
Ghee for shallow-frying

Method

1. Grate potatoes in a bowl, add kuttu atta, ginger-green chilli paste, chopped coriander, peanuts and sendha namak and mix well. Add sufficient water and knead till well combined and a dough is formed.
2. Dampen your palms, take a portion of the mixture and place it on a non-stick tawa. Spread the portion into medium size disc, switch on the heat and make small holes on the surface.
3. Drizzle some ghee on the edges, in the centre and shallow-fry till evenly golden and crisp from both sides.
4. Serve hot.
