A delightful starter – prawns mixed with onions, green chilli sauce, refined flour and deep friedPRAWN BHAJIAIngredients15-20 medium prawns, chopped roughlyOil for deep-frying2 large onions1 green chilli2 spring onions with greens1 tbsp green chilli sauceSalt to taste5-6 ice cubes2 tbsps refined flour (maida) Red chilli sauce, for drizzling A few black sesame seeds, for sprinklingMethod1. Heat sufficient oil in a kadai.2. Roughly slice onions and put into a bowl. Finely chop green chilli and add to the bowl. Roughly slice spring onions with greens and add to the same bowl. Add prawns, green chilli sauce, salt and ice cubes and mix well.3. Add refined flour and mix well. Add some 2 tbsps chilled water and mx.4. Discard ice cubes. Pick up little mixture with your fingertips and put into hot oil and deep fry till crisp. Drain on absorbent paper. 5. Transfer onto a serving plate, drizzle red chilli sauce, black sesame seeds and serve immediately.
