A quick and simple prawns recipe for an instant weekend lunch. PRAWNS PEPPER FRYIngredients20-25 prawns, cleaned and deveined4-5 tsps coarsely crushed black peppercorns2 tbsps oil 1 large onion, sliced1 tsp finely chopped ginger2 tsps finely chopped garlic12-14 curry leaves½ tsp turmeric powder1 tsp red chilli powder1½ tbsps Tata Sampann Coriander PowderSalt to taste2 tbsps freshly chopped coriander leaves4 tsps tamarind pulp3 tbsps scraped fresh coconut Method1. Heat oil in a non-stick shallow pan, add onion, ginger, garlic and curry leaves. Sauté on high heat for 2-3 minutes.2. Add turmeric powder, red chilli powder and Tata Sampann Coriander Powder, mix well.3. Add prawns and salt. Toss well and add coarsely crushed black peppercorns. Add 1 tbsp chopped coriander and mix well. Cook for 3-4 minutes.4. Add tamarind pulp and coconut. Mix well and cook for 3-4 minutes. Take it off the heat and transfer to a serving bowl.5.
