Easy to make and delectable to taste, this dish is a winPUDINA PANEER PULAO - (Serves - 4)Ingredients 1 cup fresh mint leaves (pudina) + for garnishing 250 grams cottage cheese (paneer), cut into cubes1½ cups Basmati rice, soaked and drained 2-3 tablespoons ghee1 inch cinnamon 10-12 black peppercorns3-4 cloves2 green chillies, finely chopped2 medium onions, sliced1½ tablespoons ginger-garlic paste½ cup yogurtSalt to tasteMethod1. Heat ghee in a deep non-stick pan. Add cinnamon, peppercorns, cloves and green chillies, mix and sauté till fragrant.2. Add onions and sauté till lightly browned. Add ginger-garlic paste, mix and sauté for 2 minutes.3. Add mint leaves, mix and cook for 1-2 minutes. Add ½ cup yogurt and mix well.4. Add cottage cheese, rice, salt and 3 cups water, mix well, cover and cook till the rice is fully done.5. Garnish with mint leaves and serve hot.
