The classic anda pav gets a delicious makeover with this recipe!
PULL APART ANDA PAV

Ingredients

6 hard boiled eggs, chopped
6 pavs
1 tbsp oil
1 tbsp butter + brushing
1 medium onion, finely chopped
2 tsps ginger-garlic paste
1 medium tomato, finely chopped
1½ tsps red chilli powder
1½ tsps coriander powder
½ tsp turmeric powder
Salt to taste
2 tbsps freshly chopped coriander leaves
½ cup grated mozzarella cheese
5 cheese slices

Method

1. Preheat the oven at 180˚C.
2. Heat oil in a non-stick pan, add butter and let it melt. Add onion and sauté well, cook till translucent.
3. Add ginger-garlic paste, and sauté well for 1 minute. Add tomato, sauté well and cook till pulpy.
4. Add red chilli powder, coriander powder, turmeric powder, salt and sauté for 1-2 minutes on a medium heat.
5. Add ½ cup water and mix well. Continue to cook for 2-3 minutes, stirring constantly.
6. Add eggs and mix well. Add chopped coriander and mix well. Cook for 1-2 minutes.
7. Slice the ladi pav midway, keep the top layer aside, add the prepared stuffing and spread it evenly.
8. Sprinkle mozzarella cheese on top and spread it evenly. Place the cheese slices.
9. Place the top layer of the pav and gently press it. Brush butter on top and place it on a baking tray.
10. Bake for 10-15 minutes. Serve hot.
