The classic anda pav gets a delicious makeover with this recipe!PULL APART ANDA PAVIngredients6 hard boiled eggs, chopped6 pavs1 tbsp oil1 tbsp butter + brushing1 medium onion, finely chopped2 tsps ginger-garlic paste1 medium tomato, finely chopped1½ tsps red chilli powder1½ tsps coriander powder½ tsp turmeric powderSalt to taste2 tbsps freshly chopped coriander leaves½ cup grated mozzarella cheese5 cheese slicesMethod1. Preheat the oven at 180˚C.2. Heat oil in a non-stick pan, add butter and let it melt. Add onion and sauté well, cook till translucent.3. Add ginger-garlic paste, and sauté well for 1 minute. Add tomato, sauté well and cook till pulpy.4. Add red chilli powder, coriander powder, turmeric powder, salt and sauté for 1-2 minutes on a medium heat.5. Add ½ cup water and mix well. Continue to cook for 2-3 minutes, stirring constantly.6. Add eggs and mix well. Add chopped coriander and mix well. Cook for 1-2 minutes. 7. Slice the ladi pav midway, keep the top layer aside, add the prepared stuffing and spread it evenly. 8. Sprinkle mozzarella cheese on top and spread it evenly. Place the cheese slices.9. Place the top layer of the pav and gently press it. Brush butter on top and place it on a baking tray.10. Bake for 10-15 minutes.
