Pumpkin Pie | The Dessert Queen - Neelanjali | Sanjeev Kapoor Khazana

PUMPKIN PIE

Ingredients

1½ cups roasted pumpkin puree
1x6 inch half baked tart shell
Two pinches of all spice powder
A pinch of cinnamon powder
¼ teaspoon dried ginger powder
1 tablespoon refined flour (maida)
2 tablespoons canola oil
50 grams brown sugar
35 grams sugar
½ cup fresh cream
2 eggs
2 teaspoons vanilla essence
2 tablespoons milk

Method

1. Preheat oven to 180° C.
2. Take pumpkin puree in a bowl. Add all spice powder, cinnamon powder, dried ginger powder, flour, canola oil, brown sugar and sugar and mix. Add cream and mix well.
3. Break eggs in another bowl. Add vanilla essence and milk and beat well. Add some pumpkin puree mixture and mix well.
4. Add the egg mixture to remaining pumpkin puree mixture and mix well.
5. Pour in pumpkin mixture in the tart shell filling ⅔rd, tap and place on a baking tray. Put the tray in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and demould.
6. Cut into wedges and serve.
